Homemade beef stew: Easy recipe for cold days

When the weather turns chilly and you crave something comforting, nothing beats a steaming bowl of beef stew, which is very easy to prepare.

This traditional Mexican broth is hearty, nutritious, and full of flavor thanks to the combination of tender meat, fresh vegetables, and a touch of herbs. It’s perfect for sharing with family and letting the aroma fill the house.

Ingredients (serves 6)

  • 1½ kg (about 3.3 lbs) beef with bone (shank, ribs, or stew meat)
  • 2 ears of corn, cut into pieces
  • 2 large potatoes, peeled and cubed
  • 2 carrots, peeled and sliced
  • 1 zucchini, cut into chunks
  • ¼ head of cabbage, cut into thick strips
  • 2 medium tomatoes
  • ½ onion
  • 2 garlic cloves
  • 1 sprig of cilantro
  • 1 green chili (optional)
  • Salt to taste
  • Enough water (approximately 3 liters / 12 cups)

Preparation

  • Cook the meat: Place the beef in a large pot and cover it with water. Add the onion, garlic, and a pinch of salt. Bring to a boil, skim off any foam that forms on the surface, and simmer over medium-low heat for about 90 minutes, or until the meat is tender.
  • Add the firmer vegetables: Add the corn, potatoes, and carrots. Cook for 20 minutes, until they begin to soften.
  • Add the softer vegetables: Stir in the chopped tomatoes, zucchini, cabbage, and green chili (if using). Cook for another 15 minutes, until all the vegetables are tender and the broth has a rich color and aroma.
  • Adjust the seasoning: Taste the broth and add more salt if needed. If the liquid has reduced too much, you can add a little hot water.
  • To serve: Serve the beef stew piping hot in deep bowls. Accompany it with lime wedges, chopped onion, fresh cilantro, crushed chili, or homemade salsa, and corn or flour tortillas.

Beef stew is perfect for cold days. This broth is an invitation to pause, enjoy the moment, and savor the simplicity of something made with love.
