Green pork pozole: A warm, flavorful recipe for cold days
When the cold hits hard, there’s nothing better than a steaming bowl full of flavor and tradition. This green pork pozole is perfect for sharing with family or friends, warming both the heart and the body.
Its fresh flavors of tomatillo, cilantro, and a hint of chili make it a comforting choice for any winter occasion. While this green pork pozole recipe requires a few ingredients, it is easy to prepare.
Ingredients
- 1 large can of hominy (108 oz / 3.06 kg)
- 2 kg of pork for boiling (shoulder or leg, cut into pieces)
- 2 heads of garlic, plus 4 additional cloves
- 2 pounds of tomatillos (approx. 1 kg)
- 2 ½ medium white onions (2 for the pozole, ½ for the sauce)
- 1–3 serrano chilies (to taste)
- 2 large bunches of cilantro, washed
- 1/3 cup of pumpkin seeds (optional, adds depth of flavor)
- 2 cups of water
- 2 tablespoons of salt
- 2 tablespoons of dried oregano, plus a little more for serving
- 1 head of iceberg lettuce
- 1 bunch of radishes
- 2–3 avocados
- 8–10 limes
- 1–2 bags of tostadas
- Green sauce or avocado sauce (optional)
Preparation
- Prepare the hominy: Open the can of hominy, drain, and rinse the kernels very well until the water runs clear. Place the hominy in your largest pot.
- Cook the pork: Add the pork pieces to the pot with the hominy. Add the two cleaned heads of garlic and enough water to cover everything (about 24 cups). Once it starts boiling, reduce the heat to medium and cook for approximately 1 hour, or until the meat is tender.
- Prepare the green sauce: While the meat is cooking, blend in a blender the four peeled garlic cloves, half an onion, peeled and rinsed tomatillos, serrano chilies (to taste), cilantro, pumpkin seeds (if using), salt, oregano, and 2 cups of water. If the amount is too large, blend in two batches.
- Add the sauce: Pour the sauce into the pot with the hominy and simmer over low heat for 15–20 minutes, until the light green turns into a deeper, vibrant green. Adjust salt to taste.
- Shred the pork: Remove the pork from the pot, shred it, and decide whether to add it back to the soup or serve it on the side.
- Serve: Serve the pozole with chopped lettuce, sliced radishes, chopped onion, avocado, lime, tostadas, and extra oregano if desired. You can also offer green sauce or avocado sauce on the side, to taste.
